The leaves are falling, school is back, and the pumpkin spice is in the air. Fall is here and we have a simple and delicious breakfast recipe you can start every day with – Pumpkin Spice Pancakes!

Ingredients:
  • 1.5 cups almond milk
  • 2 eggs
  • 1 cup pumpkin puree
  • 1 tbsp vanilla extract
  • 2 cups oats
  • 1 tsp baking powder
  • 1 tbsp pumpkin spice
  • 2 tbsp stevia/sweetner
Instructions:

Blend down oats into a fine powder, then remove from blender and add all your wet ingredients. Blend dry ingredients into the wet ingredients until smooth. Preheat a pan to medium heat, then pour mixture onto pan and flip once sides start to solidify.

Enjoy while wearing your favourite UGG boots, oversized scarf, or cardigan.
